Friday has arrived and its time for another Foodie Friday and today I am going to share with you one of my personal favorites.

Bruschetta is toasted Italian bread drenched in olive oil and served typically with garlic or tomatoes. Using the word drenched describes me and the way I eat a lot of my food.
Drenched in gravy, oil or any sauce is the way I was raised.
I like making Bruschetta as a little appetizer while I prepare dinner or sometimes just as a snack during the day. I don't care when really, I just love eating it.
Ths summertime is a good time to make this because you can use all the fresh tomatoes and herbs that are coming in.
See it's easy and fast to make this and you can make ahead and just keep on hand for when company comes over.

Homemade Bruschetta
Yield: 12 Servings
This is an easy appetizer or snack to make ahead of time. Using ingredients you have around the house makes it even better. Fresh and yummy!
ingredients:
- 1/4 cup olive oil
- 3 tablespoons chopped basil
- 3 to 4 garlic cloves minced
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 4 medium tomatoes, diced
- 2 tablespoons shaved parmesan(can use grated also)
- 1 loaf of unsliced French bread
instructions:
How to cook Homemade Bruschetta
- In a large bowl, combine oil, basil, garlic, salt and pepper. Add tomatoes and toss gently. Sprinkle with cheese. Refrigerate at least 1 hour.
- Cut bread into 24 slices, toast under the broiler until lightly brown. Top with tomato mixture and serve.
- Drizzle with balsamic oil
