Welcome to Foodie Friday!
It's summer and that means picnics, outdoor parties, camping and really just any reason to leave the inside and head outdoors.
We spend as much time as possible in the water during the summer and something about the water and sun makes me want to eat everything in site.
Our favorite thing to do is to pack a big picnic lunch and spend the day on Lake Norman just eating, playing and relaxing.
It is a beautiful thing!

You can customize pasta salad to your families likings you can add things like Ham Mozzarella Cheese Grilled Chicken Cubed Cheese Pepperoni or Salami |
This Pasta Salad is simple and perfect for the picnic basket and light enough that you don't feel stuffed.
So, let's get out and enjoy summer even if you just go to your back porch, enjoy the journey and this pasta salad.

Give yourself permission to take care of yourself. It really wil be ok. This concept has been a hard one for me as it is with most women I know.
I think we feel like we have to be everything to everyone and really we are just setting ourselves up for failure with those standards.
Let's add work, bills, responsibilities and life in general and some days it's enough to make me want to day drink(cheers)

Since day drinking isn't something we can do often(Lol), I try to find better ways to manage the stress of it all.
In my life, I am trying to take better care of my
Body, Mind & Spirit
and taking "Me" time is the top of my list.
Here are just a few things I do to recharge-
1. Naps-if my body says I need a nap then I go nap.
2. Read-once again knowledge is power and learning is always a way to empower you.
3. Exercise- get outside and a hike or a walk. Let the fresh air wash over you.
4. Take a mental health day- I know some days are impossible,
so schedule them on the calendar like any other appointments.
Don't feel bad or apologize and keep the appointment.
5. Meditate- I find good in every day and when issues come up I can deal with the better than I used to. Trying to get a handle on my stress is really for everyone's sake.
Find what works for you and go with it.
I am a firm believer that, you cannot serve from an empty cup.

Today, I want to share a friend, that I have been a big fan of for a long time she is an expert in the kitchen, local foodie and is a regular guest at several Charlotte TV stations.
Heidi Billotto promotes eating and supporting local farmers and products from the region.
She has been on the food scene since the early 80's and really knows her stuff.

I saw a sign on Highway 3(very rural) for those of you that don't know the area, the sign read "Farmers are important, try eating without them"
