Buttercream Frosting and 10th Birthday cupcakes

My daughters 10th Birthday is approaching and I made her cupcakes. My problem for a
longtime is I have wanted to make my own buttercream frosting.
I was scared I couldn't do it,
why I had delayed such a wonderful
experience is beyond me.
I thought it may be hard or complicated in some way,
I mean ya'll know how yummy buttercream frosting can be.
Since I have been having lots of 1st lately, I thought
I would give it a try and I nailed it!! Insert angels singing here and me high five'n myself.
Speaking of 1st, this is my daughter Ella's first time sifting powdered sugar. She loved it.
I baked the cupcakes and hollowed out the center to insert yes, more buttercream frosting.
I think you could fill with anything that you wanted, raspberry cream, jelly, M & M's.
Here the cupcakes all iced with the most perfect buttercream frosting I have ever made.
I loved how the frosting kept its consistency and shine like a gold star.
I applied two layers of sprinkles and
Voila, lets eat.
When you make the buttercream frosting, it will be all white and a basic flavor.
You can add flavors and colors to you're liking.
My daughter loves pink so this is
the frosting going from white to pink, isn't it pretty??
I flipped lots of pages in my Mom's cookbooks, looking for this recipe
that my Aunt Emily had used years ago.
Now go to your kitchen and don't be afraid to make some buttercream frosting.
I may never buy store bought frosting again.

Buttercream Frosting
1 Cup Unsalted Butter, softened to the texture of Ice Cream
3 to 4 Cups Confectioners Sugar,Sifted
1 Tablespoon Vanilla
1/4 Teaspoon table salt
4 Tablespoons Milk or Whipping Cream
Beat Butter for a few minutes with a mixer using the paddle attachment, on medium speed. Add the 3 cups powdered sugar and turn to low speed to keep sugar from flying out. Keep on low and mix sugar and butter together. Increase speed to medium and add vanilla, salt and milk or cream and beat for 3 minutes. If the frosting needs to be stiff and remaining sugar. If the frosting needs to be thinner add more milk, 1 tablespoon at a time.

NC Camping Show

I recently attended the Rv/Camping show in Charlotte, Wow did I have fun. For those of you that
don't know me, I have an obsession with campers & camping. So, this was right up my alley with
thousands of the most expensive motorhomes to affordable little tiny teardrop campers.
So be patient and sit back and enjoy a few of the pictures I took while at the show.

The Camping show was held at The Park Expo in Charlotte and it was 3 very
large buildings packed to the brim with all kinds of camping goodies.
Most of the high end campers had a fireplace and widescreen Tv's,
I loved the homey feel it creates.
Trendy lighting was making it's share of appearances too!
I know I have blogged about the Shasta and my love for this baby but,
while at the show I got to see
the yellow one in person. You can read about my Shasta crush here.
All sorts of Pop Up campers with the basics to every luxury.
Kitchens have really come along way in campers. This one has a gas stovetop and subway tile
backsplash, with granite counters.
More widescreen TV's and fireplaces. Lots of built in storage.
Some even had a Dyson vacuum built into the camper. Check out the cedar lined closet too.
Full size stainless steel fridge. I mean some of these campers/RV's I would have to live in
because I couldn't afford a house.
This RV would set you back about $200K.
Ella & I were tired of walking so we found a place to rest.
I think if you gotta rest, you might as well do it in "style"
Reclining leather sofas, of yes!!
This is my favorite. It simple and keeps the rain off your head and it doesn't cost so must that I may
have to sell a kidney to pay for. The cool thing about this one is the bunk beds to the rear to the left.
Very nice for a small family.

My Small Office Space

Welcome to my office!! This is a small area in my house and it serves its purpose well. I have
another desk upstairs in my craft room but really,
Ya'll aren't ready to see that craziness just yet,
baby steps and we will get there.
It's nothing fancy but it is my style to a "T".
The black desk came from Target years ago and it has
really held up well.
I have several Target pieces in my house and
they all seem to be great quality.
The black chair was a yard sale find, it is unique in it has a musical note on the back of it.
I spray painted the chair and recovered the cushion and in some new Paris fabric.
I adore the little lamp on my desk and on it hangs my
tag I made for a girlfriends beach trip, years ago.
I don't know what it is about us humans that we
love to surround ourselves with cute things like this.

I pin lots of things here, some are just inspiration and
other things are very important, like school calendars.

I am so happy to have a Macbook back in my life. My
baby sets on the cutest little pad in the world, not sure what its officially used for but this is
my use. It was off the clearance rack at Pottery barn. I just love the design and color.

and you got to have, yea me too!! I had no idea where I would use it at but,
this is me, a spontaneous shopper.

Community Theater and my small role.

For several years now I have been a volunteer at Davidson Community Theater, a community
theater in my area. I saw an ad looking for volunteers,
and I responded and the rest as they, is history.
Here are just a few pictures of what I have done at Davidson Community Theater. Sorry for the
really bad lighting but, no cameras are allowed in the theater, I snuck mine in. Shhh!!

One of my favorite places to be is in the wardrobe department. When you are in wardrobe, you
get to see all the costume changes, that the actors make.
Also, you do a ton of sewing on outfits to alter to
fit specific people.
I got to work on these awesome feather wings, I so badly wanted to put them on and
try to stand up at the same time. The Production of 42nd street has a bunch of dancers and
dance scenes, so these feathers got a work out.

After spending a week downstairs working in wardrobe,
they ask a few volunteers if they would
like tickets to the show, later that week. I jumped at the chance, because I don't normally see
the show, by time it goes to production.

42nd Street was a wonderful production with lots of dancing, singing and very high energy.
I really enjoyed this show, and all the others I have worked on as a
volunteer at the community theater.
If you can paint, answer phone, sew a button or anything else like that, you too can be a
important part to your community theater.
Give them a call and see where you fit in.
Sneak Peek Sunday

Since I have been gone from the land of Blogging for some time now, I thought I would show
you just a sneak peek at what I have been up to.
This Chevron Deer Head was a labor of love, since it has to be done in layers and you have to
wait for each one to dry before moving on.
My issue is the waiting, I am not really good at that part.
I made this tissue flower for my gallery wall and have since made several more for friends and family.
It's easy and you already have the supplies on hand, if you drink coffee.
I built this wood sign this past summer and bought a cheap poster, cut the poster out and glued
it to the wood after the stain was dry.
I have made eye charts and other things but, they have gotten gone before I snapped a pic.
Well that's just a little look at what I have been up to over here. More projects to come, real soon.

Easy Spinach Dip

My Family loves Spinach Dip, and on the days like we have had recently, wet, cold & rainy,
this is a great snack to have around.
INGREDIENTS
- 1 box (10 oz.) frozen chopped spinach, cooked, cooled and squeezed dry
- 1 container (16 oz.) sour cream*
- 1 cup Duke's Mayonnaise
- 1 package Knorr Vegetable recipe mix
The Knorr package calls for onions and water chestnuts but, my family doesn't eat, so I leave out.
DIRECTIONS
Combine all ingredients and chill about 2 hours. Give the dip a good stir each time you start to eat, cause it can get a little runn
After I thaw cook my spinach I drain really good.
This is the sour cream, mayo, spinach and Knorr dip mix in a big bowl.
Here is the spinach dip mixed and ready to chill for a few hours. Hope your family enjoys as much as
mine does.

Shasta gets a new old look. Bringing the Shasta Camper back for a limited time!

I'm sure everyone is aware that retro campers are all the rage right now. They are being turned in to
the cutest little campers for families to enjoy all over again, just like the old days.
Drum Roll please- Shasta is rolling out 1,941
Reproduction Shasta Airflyte campers.
remodel job, but wait, its the new Shasta Airflyte.
The Shasta Company will only be remaking 1,941of these campers, to mark the 75th Anniversary of
the company started in 1941.
They will come in Seafood Green, Buttercup Yellow and Matador Red.
LED Lighting reproduced to look like the original Shasta gas lamps, this time they are using the classy Edison Bulbs.
The interior has Birch cabinets with chevron cabinet pulls.
Black & White checkerboard flooring
Jalousie Windows-which are louvered glass panels often seen in storm doors or enclosed porches
As no detail has been left out they also included the reproduction birch Shasta magazine rack.
New modern mechanicals and plumbing are also some upgrades, since the older models came out.
Tin Can experts say, that it's about 90% reproduction of the older Shasta.
Sticker price is going to be between 15,000-17,000
I have been camping since I was a little girl in the Shasta above. My parents would
pack up us 3 kids and themselves and off we would go.
I spent many nights with my family just hanging out,
riding my bike and sleeping in this Shasta, it is still in my family today.
So, I hold the Shasta close to my heart, and feel I don't have a childhood memory that doesn't include
these fabulous campers.
